Cajun Spices for Stuffing

I've lost track of the number of boondoggle conferences I've gone to in New Orleans just so I could spend time perfecting this combination of spices...

I use this in Roasted Chicken with Andouille and Shitake Stuffing, Turducken, and Dirty Rice, among other things.


6 t Paprika
2 t Cumin
1 t Cayenne Pepper
3 (3") Stalks Fresh Rosemary (leaves chopped fine)
5 (2") Stalks Fresh Thyme (leaves chopped fine)
4 (Rounded) T Corn Meal
Red Pepper Flakes
Black Pepper


Take all of your spices and the corn meal, and mix together in a bowl with your fingers. Yields about 8 tablespoons.
