Over the past few years, when it's getting closer to time for plating up the meal, I've taken to doing little sketches of what I want the plate to look like for presentation. Clearly, not some kind of photo-realistic drawing, but more of a starting point for me to think about how to engage the people who have come for dinner on a visual level before they eat. I've tried to translate that over to here.
